How to make butter


Never buy butter again.

Butter is a key ingredient in French cooking but how can you make it from scratch. Making your own French-style butter is actually very easy, all you need is good quality cream and a whisk.

NOTES

  • You can store butter in the fridge for a few days or freeze it for several weeks. Butter keeps well frozen without losing taste or flavor.


INGREDIENTS  

  • Good quality cream with 35% fat

  • 2% of salt if you want to make salted butter (based on the amount of butter used)


INSTRUCTIONS 

  1. Pour cream into a whipping bowl. 

  2. Whip it and keep whipping until it starts to turn yellow. Keep whipping and eventually, the yellow fat will separate from the white buttermilk.   

  3. Remove the yellow fat and put it under cold water for a short while. This will rid the butter of excess buttermilk. 

  4. Press the butter between 2 wooden spoons to extract the moisture remaining until the right texture is attained. 

  5. To transform your butter into a salted butter add 2 percent of fine salt over the butter and then "churn" in a stand mixer with a flat beater on low speed. Alternatively, work the butter by hand with a spatula until the salt is well incorporated. When done, form the butter into a shape of your choice and store it in the fridge in a closed container.
