COURGETTE WITH CHORIZO


Sautéed courgettes with onions, cumin, lemon, and chorizo for a summer side. 

This recipe for sautéed courgettes with onions, cumin, lemon, and chorizo is a perfect example of how a few ingredients can come together to create a flavorful meal, allowing the natural flavors of the ingredients to shine through. It is great as a side dish or a tapas-style appetizer.


INGREDIENTS

Serving: Serves 4

Preparation time: 5 minutes

Cooking time: 10-15 minutes

·     4-5 courgettes

·       2 tbsp olive oil, divided

·       1 tbsp cumin seeds

·       1 onion, finely diced

·       Salt and pepper to season

·       ½ chorizo sausage, skin removed

·       Handful coriander, to garnish

·       Zest of 1 lemon


MISE EN PLACE

Cut the chorizo into medium-sized cubes.

Remove the ends of the courgettes and use a vegetable peeler to peel strips off, leaving a 1 cm gap of skin between each strip. This helps to keep the courgettes sturdy after cooking and avoid sogginess. Cut each courgette into slices and transfer to a bowl.

Method

  1. Heat 1 tablespoon of oil in a non-stick pan over high heat. Add the cumin seeds and cook for about 1 minute until the seeds start to pop.

  2. Add the onions and sauté for about 5 minutes until lightly browned. Transfer the onions to a bowl.

  3. Heat another tablespoon of oil in the same pan and add the courgettes. Cook in batches if necessary to avoid overcrowding the pan. Sprinkle with salt and pepper to taste and sauté for 6-8 minutes, tossing occasionally to evenly cook the courgettes.

  4. Add the onions back in and cook for a further minute or so before removing from the heat.

  5. In a separate pan, pan-fry the chorizo for 2 minutes, tossing occasionally, until browned. Drain the chorizo on paper towel to remove excess fat.

  6. To serve, place the courgette slices on a plate and sprinkle with the chorizo. Garnish with coriander and lemon zest and serve immediately.

TIP

  • You can also add some sliced garlic to the pan when cooking the courgettes and onions.

  • Try using spicy chorizo for a spicier punch.
