GLUTEN-FREE SHORTCRUST
When it comes to shortcrust recipes, there are actually plenty of possibilities for replacing wheat flour. And after some testing, I’ve landed on an easy and tasty gluten-free shortcrust that you can serve to anyone (without needing to make two different quiches).

Bacon, Mushroom and Gruyere Quiche
The flavors of Normandy are deeply rooted in the pillars of cream, cider, calvados, and apples. In this region of France, these ingredients grace almost every recipe, and this mussel recipe is no exception. It takes a unique approach by incorporating cider instead of wine to steam the mussels, enhancing their flavors.

QUICHE AU FROMAGE
This triple cheese quiche is simply sensational. I carefully chose three styles of cheese (hard, soft, and a blue cheese) to create a fine balance of flavors. The nuttiness of the Comté contrasts beautifully with the soft, creamy texture of Fontina, and the addition of pieces of blue cheese on top delivers a little nugget of treasure every now and then.
