BAKED PORK CHOPS WITH MUSTARD

INGREDIENTS

  • 2 pork chops (ideally with the rind on)

  • ½ onion, finely sliced

  • ½ garlic clove, finely sliced

  • 3 tbsp Dijon mustard

  • 1 tsp dried thyme

  • 2 bay leaves

  • 100 ml (1/3 cup) good quality blonde beer (lager)

  • Olive oil, for drizzling

  • Salt and pepper, to season


METHOD:

  1. Season the pork chops generously with salt and pepper on both sides, then brush them with Dijon mustard.

  2. In an oven-proof baking dish, place the pork chops and scatter the sliced onion, garlic, thyme, and bay leaves on top. Drizzle with olive oil. Transfer the dish to a preheated oven at 200°C (fan-forced) and bake for 10 minutes.

  3. After 10 minutes, remove the dish from the oven and pour the beer over the chops. Return to the oven and bake for an additional 20-25 minutes, depending on the size of the chops, until golden brown and cooked through.

  4. Serve immediately with mashed potatoes, potato gratin, or sautéed potatoes. For a lighter option, steamed green beans make the perfect pairing.
