FRENCH ONION SOUP
The ultimate comfort food.
The authentic French onion soup is one of simplest comfort foods to make. This recipe has been around for centuries and the only ingredient that has changed over that time is adding the cheese on top. For the best results, use the best quality ingredients you can find to guarantee a delicious and authentic French flavor.
Ingredients
400 g (14 oz) of brown onions
1 liter (4 cups) of stock
50 g (1.8 oz) of top quality unsalted butter
100 to 200 g of gruyere or comte cheese (grated)
Several slices of French baguette or similar slightly toasted
Salt and pepper for the seasoning
procedure.
First peel, wash and finely slice the onions (or use a food processor).
Make a bouquet garni (with leek, celery, thyme,1 bay leaf and parsley tied together)
Heat up the stock (homemade or top quality ready-made stock) and leave to simmer.
Melt the butter in a cast iron or thick bottom pan and add the onions. Stir well and season with salt and pepper. Then cook the onions on a medium heat for 30 minutes until brown (stir regularly to so the onions are evenly browned).
Then add the stock a little at a time stirring gently. Add the bouquet garni and let the soup cook on a low heat for 20 minutes.
Take a small bowl or dish (preferably with handles) and place the baguette slices on the bottom. Pour in some soup (3/4 from the top) and then add a few more slices of bread on top.
Cover the bread with a generous amount of comte cheese and place the dish(es) under the grill for a few minutes until the cheese has melted and a crust is formed.
When done serve immediately.
